What is Kneads Proof?

Kneads Proof is a cottage home bakery near the heart of downtown Lodi. My journey started as I endeavored to produce a loaf of bread that was health conscience. I was looking for a bread that wouldn’t spike the blood sugar and would be easily digestible. Come to find out it was a simple as a starter (levain), flour, salt, water. It’s been a rewarding process of learning this unique dough to bring a delightful loaf you can feel good about.

How I Got Here

In 2014, our family’s relationship with food changed drastically—and in some ways, it was a lifesaving transformation. One of my daughters began to view food as an enemy, heading down a path that too many young girls find themselves on. I was determined not to let that take root in our home. So, I set out on a journey to change how we nourished ourselves.

It wasn’t easy at first. There were plenty of failed attempts, strange-tasting experiments, and lessons learned along the way. But eventually, we found our rhythm in the kitchen. Slowly but surely, we began putting meals on the table that appealed to everyone and, most importantly, helped shift my daughter’s mindset. She learned how to see food as fuel for a healthy body—not an adversary. We discovered how to use food to nourish ourselves, making choices based on knowledge and balance, rather than restriction.

In the process, my love for experimenting in the kitchen grew. I started dabbling with homemade kombucha, yogurt, kefir, and, eventually, a wild sourdough starter. That sourdough starter changed everything.

Around that time, several ladies at my church were also working on improving their families’ eating habits. When I started posting photos of my sourdough loaves on Instagram, I was surprised by the response. “Are you selling that bread?” “Can I buy a loaf?” Suddenly, what had started as a personal experiment turned into something bigger.

Why Sourdough?
Many people wonder why health-conscious eaters would be interested in bread. Isn’t bread supposed to be unhealthy? Not sourdough! The flours I use—such as rye and spelt—are packed with nutrients far beyond what’s found in most store-bought grains. Plus, sourdough is created through fermentation, which breaks down carbohydrates, making the bread easier to digest and adding beneficial nutrients.

For years now, sourdough has been a staple in our home. Naturally fermented bread is rich in protein, fiber, and micronutrients. It’s gentle on blood sugar and keeps you full longer. Unlike most retail sourdoughs that use dry yeast, my loaves are made with a wild sourdough starter that promotes gut health and offers that signature tangy flavor.

Each loaf contains just five simple ingredients, so you know exactly what you’re getting—no fillers, no preservatives. Every batch is made with practice, patience, and a whole lot of love.
