In my breads I use a Rye starter and a mix of flours for a blood sugar friendly bread that’s high in fiber and protein. The yeast I use here at Kneads Proof is wild caught, meaning it comes from the air. The most local you can get! The fermentation process is long, meaning it deepens the “sour” flavor and no other leavening agents are added —the levain does the work. It has taken time and tedious measuring to perfect this process and I am confident it will be love at first bite!

This bagel recipe uses the same sourdough starter as our loaves. A long ferment is also used with the bagels. We want these bagels to be just as gentle on your body’s system as our sourdough loaves. Whether you want a morning bagel with cream cheese, egg sammie, or an afternoon lox and capers, these are sure to hit the spot.

The original loaf has quickly become a staple our customers request on repeat. A healthy no nonsense loaf that makes a perfect start to any sandwich you can dream up! The Cinnamon Raisin loaf is so reminiscent of the one I grew up eating! It is easily a favorite of mine. Butter, peanut butter or cream cheese. Yes, please!

Do you remember seeing these in your chain grocery store freezer section? Well I’ve condensed the ingredients list to about one-third of what those frozen ones are made of. These have been a huge hit with my customers! Sure to hit the sweet tooth right where it’s at. And of course like all that I make, this is sourdough too.
